Scholars frown on the term ‘Dark Ages’, but in terms of cookery, you could still make a pretty good case. In the absence of almost any recipes and with very little in the way of other written sources, reconstructing the foodways of the era is difficult, often fraught with speculation and uncertainty. In this class, we will look at some approaches, sources and ideas that can get us closer to reproducing the culinary world of the barbarians.
